Ingredients:

  • 1 1/3 cups plain flour

  • 3 tbsp caster sugar

  • 1 tsp baking powder

  • 1 tsp baking soda

  • ½ tsp salt

  • 2 large eggs

  • 1 ¼ cups buttermilk

  • 4 tbsp melted butter

Method:

  1. Mix the dry ingredients, the flour, sugar, baking powder, baking soda and salt in a medium bowl

  2. In a separate bowl mix together the wet ingredients, the eggs, buttermilk and melted butter

  3. Pour the wet ingredients into the dry ingredients and mix until everything is well incorporated*

  4. Let the batter sit for 10 minutes

  5. Use around 1/3 of a cup of batter per pancake and cook them in a non-stick pan on medium-high heat*

  6. Enjoy!

Serves: 8 pancakes

Cook time: 15 mins

Total time: 35 mins

Don't overmix the batter, it really makes a difference!

You will also have to spread out the batter using the 1/3 cup.
