
Ingredients:

1 1/3 cups plain flour

3 tbsp caster sugar

1 tsp baking powder
-
1 tsp baking soda
-
½ tsp salt
-
2 large eggs
-
1 ¼ cups buttermilk
-
4 tbsp melted butter

Method:

Mix the dry ingredients, the flour, sugar, baking powder, baking soda and salt in a medium bowl
-
In a separate bowl mix together the wet ingredients, the eggs, buttermilk and melted butter
-
Pour the wet ingredients into the dry ingredients and mix until everything is well incorporated*

Let the batter sit for 10 minutes
-
Use around 1/3 of a cup of batter per pancake and cook them in a non-stick pan on medium-high heat*

Don't overmix the batter, it really makes a difference!
You will also have to spread out the batter using the 1/3 cup.
