Ingredients:

  • 400g chicken thigh or breast

  • 3 tbsp soy sauce (plus extra)

  • 3 tbsp mirin (plus extra)

  • Sake

 

Method:

  1. Lay chicken in a glass dish and poke with a fork

  2. Mix 2 tbsp of soy sauce and 2 tbsp of mirin together in a small bowl and pour over chicken

  3. Rub the sauce into the chicken and then let it rest and marinate for 10 minutes

  4. Place into frying pan on medium high heat with some oil

  5. Heat until golden brown, then turn over

  6. When both sides of the chicken are golden brown add a little bit of soy sauce, mirin and sake before covering the chicken to cook for 5 minutes

  7. Uncover the chicken and remove it from the pan, cutting it into bite sized pieces

  8. Mix together the rest of the soy sauce and mirin for a sauce

  9. Enjoy with rice and sauce for a delicious meal!
