Ingredients:

  • 1 butternut pumpkin

  • 2 potatoes

  • 1 brown onion

  • 4 cups water (or enough to cover the vegetables

  • ½ cup cream

Method:

  1. Chop pumpkin and potatoes into inch size pieces

  2. Dice the onion

  3. Cook onions and oil until golden brown in a large pot

  4. Add pumpkin and potatoes and stir until well coated in the onions

  5. Cover everything in water and let simmer until the pumpkin is soft enough to poke a fork through

  6. Blend until smooth

  7. Pour in cream and stir

  8. Enjoy with garlic bread or toast!

Serves: many!
