Ingredients:

1 butternut pumpkin
-
2 potatoes
-
1 brown onion
-
4 cups water (or enough to cover the vegetables

½ cup cream

Method:
-
Chop pumpkin and potatoes into inch size pieces

Dice the onion
-
Cook onions and oil until golden brown in a large pot
-
Add pumpkin and potatoes and stir until well coated in the onions
-
Cover everything in water and let simmer until the pumpkin is soft enough to poke a fork through
-
Blend until smooth
-
Pour in cream and stir
-
Enjoy with garlic bread or toast!
