
Ingredients:

1 cup of flour

1 cup of brown sugar
-
½ cup coconut
-
2 tbsp cocoa
-
125g melted butter
-
1 tsp vanilla
-
1 cup of icing sugar
-
2 tbsp cocoa
-
30g melted butter
-
2 tbsp water
Method:

Preheat oven to 180°c / 350°f

Add melted butter, flour, coconut, sugar, cocoa and vanilla essence to a large bowl

Stir with a spoon until well combined

Tip into a lined tin and press down with fingers
-
Bake for 20 minutes (the middle may still be soft but it will harden, take care to not burn the edges)

Combine icing sugar, cocoa, melted butter and water in a small bowl with a whisk to make the icing
-
Spread icing over a cooled slice, sprinkle some extra coconut on top for presentation while the icing is still soft, then cut and enjoy!
