Ingredients:

  • 9 egg whites

  • 1 ½ cups caster sugar

  • 1 tsp cornflour

  • 1 tsp white vinegar

  • 250ml whipped cream

  • Fruit to top

Method:

  1. Preheat oven to 200°c

  2. Beat egg whites until they are white and fluffy

  3. Add caster sugar gradually until it is white and glossy with stiff peaks

  4. Add the cornflour and white vinegar

  5. Mould into a round shape 5-8cm high on baking paper

  6. Turn the oven down to 100°c and cook the pavlova for 2 ¾ hours, then open the oven door and leave until it is completely cooled

  7. Decorate with cream and fruit of your choice
